Creamt Lemon Pasta recipe

Ingredients:
160g/6oz pasta


1 tablespoon of olive oil
2 cloves of garlic, crushed
2 teaspoons of grated lemon zest
60g/2oz/4 tablespoons of low fat cream cheese (soft cheese)
50g/2oz/2 cups of rocket (arugula)
Salt and freshly ground black pepper


Method:
1. Cook your pasta according to the instructions on the packet.

2. Drain the pasta, and then return to the pan.

3. Over a low heat, stir in the olive oil, garlic, lemon zest and low fat cream cheese. Mix until the cheese has melted.

4. Finally stir in the rocket (arugula) and season to taste with salt and pepper. *

Ingredients:

1 cup sabut Urad Daal
1 Onion (finely chopped)
3 Green chilies (finely chopped)
1 tbsp Red Kidney Beans (Razma)
A few Coriander Leaves (dhania patta) (chopped)
4-5 flakes Garlic Paste
1 tsp c*min (jeera) Seeds
1/2 tsp Turmeric (haldi) Powder
1 Tomato (finely chopped)
1/2 cup Stirred Curd (dahi)
1/2 cup Fresh Stirred Cream
2 tbsp b*tter
1 inch Ginger (adrakh) Piece (chopped)
1/2 tsp Coriander (dhaniya) Powder
1/2 tsp Garam Masala
Red Chili Powder to taste
Salt to taste

How to make Dal Makhani:

Soak kidney beans overnight in water.
Put urad daal and kidney beans with water and a little salt in a pressure cooker and cook for about 25 minutes.
Mash the mixture and again cook for 15-20 minutes.
Add cream and curd to the daal.
Heat oil in a kadhai.
Saute c*min seeds and add garlic paste.
Fry the paste till light brown.
Add onions and saute till golden brown.
Add tomatoes, ginger, and green chilies.
Fry till tomatoes turn soft.
Now add turmeric powder, coriander powder, chili powder, and salt.
Fry for a few minutes.
Reduce the flame to medium. Add daal and stir.
Remove from the flame as soon as it begins to boil.
Add garam masala powder.
Garnish with chopped coriander leaves and add a dash of b*tter.
Serve with naan or hot rice.

Kali masoor pulao

Ingredients:

2 cup: Long grain rice (biryani rice)
1 and 1/2 cup: Black Lentils
2: Medium size onion
2: Medium size red tomatoes.
1/2 spoon: ginger garlic paste.
1/4 spoon: garam masala
1/4 spoon : turmeric powder.
1/4 spoon: dhaniya powder.
1/2 spoon: Red chilli powder.
Handful: Coriander and mint.


Method:

1) Pre-soak the black lentils and the rice separately in water for 5 to 6 hours. This process help the rice to cook softer and faster. Even the black lentils will cook faster.
2) Cook the rice separately with jeera, little ghee and sufficient water so that they are cooked non sticky. i.e each rice grain should come out separately.
3) In a vessel (i used a cooker) add some oil and saute the chopped onions till they turn translucent (pinkish). Next add chopped tomatoes and keep sauteing till the raw smell is gone. Add ginger garlic paste and the rest of the ingredients. Keep aside a little of the coriander and mint leaves for garnishing.
4) Now add the black lentils without the water (in which they were soaked). Saute for some time. Add very little water, only sufficient enough for them to cook. Remember if you add more water then the daal will tend to break and become watery which is just not right for pulav.
i cooked the black lentils in the cooker for exactly 3 mins and they turned very much as i wanted. That is they were appropriately cooked and didn't break.
5) In a heavy bottomed vessels arrange the rice and black lentils layer alternately with the bottom most and top most layer being of rice. after each rice layer sprinkle some coriander and mint leaves and a little of ghee.
6) Keep on low flame for 10 min till there is steam till the upper most layer. Remove from heat and serve hot. While serving make sure that you insert the spoon vertical to the length of the vessel so that you get the layers in your dish. :) ENJOY !! *

Chocolate Ice cream

2 cups whole milk
5 large egg yolks
cup plus 2 tablespoons sugar
1 cup heavy cream
10 ounces bittersweet chocolate, melted

In a heavy bottom saucepan bring milk to a simmer. Meanwhile, combine egg yolks and sugar in the mixing bowl of an electric mixer. Beat at medium-high speed until very thick and pale yellow about 3 to 5 minutes.
Add half the milk to egg-yolk mixture and whisk until blended. Stir into remaining milk and cook over low heat, stirring constantly, until mixture is thick enough to coat a spoon.
Remove from heat and immediately stir in cream. Pass mixture through a strainer into a medium mixing bowl set in an ice bath. Whisk in melted chocolate and let chill, then freeze in an ice-cream maker according to manufacturer's instructions. Store in a tightly covered plastic container in the freezer.

Sabudana vada banana ho to uske liye sabudana ko raat ko paani me daal do. savere uble hue aloo me masala wagera daal ke usi me sabu dana daal do aur tikiya bana lo,, fir oil me fry kar lo,, sabadana tikiya taiyar ho jayegi,, bahut easy recipe he.

Ingredients

1/4 cups rajma ( red kidney beans )

1/2 count finely chopped onions

1 count finely chopped tomatoes

1 tsp finely chopped ginger

2 count green chillies

1 tsp jeera

1 tbsp oil

2 tsp chopped corrainder leaves (dhania patta)

1 tsp fresh lemon juice

Powders :

1/4 tsp garam masala powder

3 pinches turmeric (haldi) powder

1 tsp salt

1/4 tsp chilli powder

3/4 tsp corrainder (dhania) powder

Banane ka tarika

1- Raat ko rajma maani me gala do . savere cooker me 4/5 siti dekar boil kar lo ya jab tak naram na ho jaye. fir isko kisi chamche se thoda tod lo.

2- Kadahi me oil dalo, jeera, kati hui pyaz, kati hui hari mirch aur kata hua adrakh dalo aur thoda bhoon lo.

3- Ab kate hue tamatar daal do, fry karo uske baad jara sa pani daal do,, tamatar poora gal jayega.

4- Ab itne bhi powder masala likhe hain sabko daal do, halka sa bhuno aur jara sa pani fir daal do.. boil karo.

5- Ab isme uble hue rajma ko daal do.. pani apne hisab se dalna hai.. kareeb 5/7 minute tak boil karna he.

6- Last me dhania patta daal do.

Ban gaya rajma,, yahi basic recipe he rajma ki. ab chahe isme aloo dalo ya koi aur cheej, wo apki pasand. *

Koi jaruri nahi ki dhokla banane k liye uska special cooker he hona chahiye.
Jo normal pressure cooker aata he wohi best he..
Cooker me pani dalo, jyada nahi, kareeb ek se 2 glass.
Ab dhokle ke ghol ko aise bartan me daalna he jo cooker ke bheetar chala jaye.
Cooker me niche koi jaali ya aisa kuch rakho isse dhokle ka bartan pani ke upar rahe.
Ab cooker ka dhakkan band kar do.
Siti nahi lagana upar. steam bahar jane do.
15 minute baad khul lo.
Dekhna ekdam spongy dhokle taiyar ho jayenge..
Ek do bar try karo,, dekhna haath set ho jayega. *

Agar cooker bhi na ho to bhi koi tension nahi.. jo kaam cooker se karenge wahi kaam kisi bade bartan me pani daal ke kar sakte hain.
Process same rahega jaisa cooker me karne ko likha mene.

Usme chini daalna jisse wo meethapan pakad le. thoda khatta karne ke liye nimbu ka ras bhi daalna.
ab dhokla bahar nikalo aur uske piece kaat lo.

Ab kadahi me thoda sa oil dalo,, oil garam hone par isme kali sarso dalo. Jab chatakne lage to isme kari patta aur hari mirch sabut dalo.
2/4 bar chala ke nikal lo.

Ab dhokle ke tukde ko chini wale pani me duba ke bahar nikal lo aur ek plate me rakh lo. pani nikal jaye to koi baat nahi.. dhokla khatta meetha taste pakad lega..
Last me upar se sarso, kari patta, hari mirch wala baghaar chhidak do..
Dhokla ready. *

Vegetable Cheese Bread Rolls.

Cheese cubes 6 no
Bread slices 12 no
Mixed vegetables
handful of green peas
handful of corn
potato small 1 no
carrot small 1 no
Green chilli 2 no
Ginger small piece
Red chilli powder 1 tea spoon
c*min powder tea spoon
Corn flour for dusting bread rolls 2 table spoon
Mint or coriander leaves few
Salt as per taste
Oil for frying bread rolls

Method

Vegetable cheese mix for bread roll: Boil and mash mixed vegetables; grate the cheese; chop finely mint leaves, green chilli and ginger.

Mix well the above mashed vegetables, grated cheese, chopped mint leaves, green chilli and ginger; add red chilli powder, c*min powder, salt and mix well; now vegetable-cheese mix is ready.

Bread roll: Trim the edges of the bread slices; take one slice of bread and wet it slightly; keep little amount of veg-cheese mix and roll to any convenient shape (the veg-cheese mix must be completely sealed inside the bread); now dust it with corn flour; repeat it for other bread slices too.

Heat oil in a pan; deep fry bread rolls till crisp and golden colour; if required fry in moderate or low flame; keep fried bread rolls on a kitchen tissue to absorb excess oil.
